I would add veggie burgers or a veggie option. And maybe some more starchy sides – potato salad, baked potatoes, pasta salad, something of that vein.

Ditto that you need another side or two, and I’d add a salad that could do double-duty as a main for anyone trying to eat light (like a spinach salad).

I would make sure ot have a vegetable without meat in it too.

Ditto on the previous suggestions, but I just want to say screw tacky – I want to go to your wedding! We had a traditional, semi-formal wedding and while I had fun, it’s made me LOVE the idea of whimiscial, rustic, or casual get togethers as they just sound SO amazing!

Yum! Sounds delicious. I agree about the vegetarian options, but it sounds like your friends/family members bringing dishes are covering that πŸ™‚ Have fun!!

I LOVE potluck weddings!!!  If there are no vegetarians coming to your wedding, I don’t see why you would need a vegetarian option.  But, I think you guys could use some more sides.  I don’t know what all your guests are bringing, but I would suggest some Italian pasta salad (some people might not like crab), potato salad, macaroni salad, corn on the cob, baked beans…

Around here, when we do pulled pork sandwiches, we usually have cole slaw, baked beans, and some form of potato (fries, baked potato, sweet potato, chips) with it.

We make burgers and hot dogs a lot, and normally for sides I do baked beans and Italian pasta salad.  Pickles and chips, too.

As far as the carne asada, I would definitely recommend further “Mexicanizing” the menu to compliment that (if you can).  Like, include some tortillas, mexican cheese, salsa, refried beans, sour cream…

My step-cousin had the most awesome potluck reception ever.  They had homemade meatballs and sauce (Italian family), different kinds of pastas, salad, bread, sausage and peppers with rice, chicken (I can’t remember what it was called, but it was awesome!), and some other great things.  I enjoyed that meal far, far more than any of the expensive reception meals I had at weddings to follow.

More vegetarian-friendly options would probably be a good idea. However, if it’s semi-potluck, any non-meat-eaters will probably bring their own dish anyways…so maybe not necessary? Dunno.
