Honestly, you have to be in the right place at the right time.  It is really difficult to get a job at my university, but I reminded my boss of his former assistant, and I had experience working as an admin in trade (I work in a trade shop at my university).  Also, I was really straight up about why I was applying.  I told them bluntly, “I just want to work for ___.  That’s the only reason I applied.”  My boss liked that. 🙂

Also, there is nothing wrong with leaving your law degree off your resume.  🙂
