I usually eat them plain with a little sea salt sprinkled on them.  But my favorite thing is to take one tomato, one avocado, a little salt and pepper, an egg, and some bacon.  Mix it all together and eat it as a salad.  (It is high fat/high calories, so I normally eat it on days I’m going to be climbing.)

I like it instead of mayo on a sandwich (especially a BLT)

mix it with red onion, corn, black beans, lime juice, cucumber for a salad

puree it and mix with plain yogurt or light sour cream for a crema and use it to top burritos or something similar

Puree it and add red wine vinegar and a splash of water and oil, salt, touch of mustard, garlic, pepper for a salad dressing

Oh yum, one of my favorite foods!

I love them plain, with just a little S&P and lime/lemon juice.

Incorporated into tacos (I like mine heavy on the avocado!): carne asada tacos and fish tacos (not the baja fried fish and cabbage style, just simple grilled white fish, white onion, cilantro and avocado on a corn tortilla).

A great summer salad is quinoa, avocado, roasted corn, onion and jalapeno. Season to taste with S&P and lemon juice. We like this salad paired with BBQ chicken, or one its own as a lunch.

A great sandwich is salmon (leftover is fine), avocado and sprouts in a pita pocket. Simple and delicious.

i make grilled avocado sandwiches and they’re delicious! make it just like you would a grilled cheese, expect use 1/2 a sliced avocado instead of the cheese and spread brown mustard over one of the slices.

I like deconstucted guacamole stacks in the summer (I try to avoid non-summer tomatoes when possible…)

You can make avocado ice cream

I like it with grilled chicken

corn, black bean and avocado salad is SO good. Add some mango and/or jicama to it and it’s even better

Ooh, I love avacados any way. Usually I eat them halved with garlic salt. Or spread on wheat toast with garlic salt (heh, I do like garlic)

i like having it for dessert.  I make a shake of avacado, condensed milk and ice in a blender.

LOVE avocados! I eat them with everything lol.

One thing that is weird, but tastes great is stir fry. Serious. Saute up some onions and veggies with oil olive. Mush up some avocado with sour cream and spices and mix into the veggies. Bizarre, but yummy.

I like eating avocados plain with a bit of salt and lemon. Sometimes I’ll eat some white rice on the side as a meal.

I also put them into sandwiches with cheddar cheese bread I get from the farmer’s market. YUM!

And.. no dips? No guacamole? Sad day!

we put it on everything… literally… it’s a staple side vegetable to add to any meal…
