So I am having a limited bar with beer, wine, and a selection of cocktails.
I know this isn’t a super representative sample, but I am wondering if at least one person on here would choose each drink I’m thinking about including on my bar menu. I will also have the bartenders pour really simple drinks (rum and coke, vodka and sprite, whiskey and coke, etc.), but I want to limit the more complicated drinks to 6.
I will have bar menus with drink descriptions.

My favorites are long islands, margaritas and vodka & cranberry…on the list you provided I’d try the mango mojito (sounds yummy!) and then probably beer.

Mango Mojito! That sounds very lovely – second choice would be the spiked tea. I am not a beer fan =)

I love mojitos. I had pineapple mojitos at my wedding. They were so yummy. We ran out.

My personal preferences would be the Spiked Tea or the mojito. I just don’t care for bourbon, personally, or vodka very much (depends what it’s mixed with). Otherwise i’d be perfectly content with a single mixer gin and sprite or beer or wine.
Everybody is really drinking up those spiked teas right now though. They are crazy popular and they taste really good!

I’m doing the same with beer, wine, and “simple” mixed drinks (rum and coke, vodka cranberry, etc). I had originally planned for two “fancy” cocktails to go along with it, but the more I thought about it, the more I think one is plenty.
So, my point is, six is awesome, and I’d love it as a guest (though I’d probably just drink mojitos all night), but if you want to cut back to make things more simple, make it easier on your bartenders, and keep bar lines moving faster, I think that would be just fine, and the guests would never miss the additional 3 options or whatever.

i don’t drink. when i do (maybe once every 2 years) i’m very picky, so out of that list i’d go with water.
