I think beer and wine is great! If you wanted to do a cocktail though, could you use those big containers with spigots so people can serve themselves? It would be so much easier than making hundreds of individual drinks in mason jars. You can make them really pretty with lemons or limes or cucumbers inside, depending on what goes with your drink.

Good idea!! We could probably even use frozen lemon, lime etc to keep it nice and cold!! Thanks

I think it’s a cute idea, the only concern I’d have is if it’d be a hassle for you. IF you want to choose some drinks, check out the Pitcher Cocktails series from a practical wedding: http://apracticalwedding.com/category/how-to/wedding-food-tutorials/
I’ve been to many weddings were the venue did not allow pouring mixed drinks and still required bar tenders to keep things under control. My friends would usually offer beer, wine, and sangria. The sangri would come from a large beverage dispenser like this: http://www.bedbathandbeyond.com/store/product/yorkshire-2-gallon-mason-chalkboard-beverage-dispenser/1042077367?categoryId=12926
