I like making a egg sandwich of sorts.  I use the Arnold Sandwich Thins (1 pt), a slice of reduced fat provolone (1 pt), 1/2 cup of egg whites (1 pt), and some tomato slices (0 pts).

For on the go breakfasts, I make mini-quiches.  Egg whites, salsa, reduced fat cheese, ham or turkey…the possibilities are really endless with these.  I pour the mixture into a muffin tin and bake.  I freeze them in twos, and then I have breakfasts for 6 days!  The points to vary on these depending on what you put in them, but they are super yummy.
