My Mother-In-Law has the best! However, make it the day before bc it’s awesome when it’s chilled for awhile.

16oz canned pumpkin

14 oz low fat sweet condensed milk

2 eggs

1 teaspoon cinnamon

1/2 teaspoon ground Ginger

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

Combine all ingredients and pour into 9″ unbaked shell. Bake 15 mins at 425. Then reduce heat to 350 and bake for 35 minutes more. Yum!

I think the last time I made pumpkin pie I used the recipe on the Libby’s can as well, and it turned out pretty well.

Though the other day I saw pie pumpkins at Trader Joes, with stickers on them explaining how to make pie out of the real thing…and I think I’m going to take a stab at it.

It seems to me most pumpkin pie recipes are very similar, and you basically can’t go wrong as long as the finished product tastes like pumpkin and cinnamon/nutmeg.  🙂
