Personally, I wouldn’t as that is not something you can do ahead of time and there is enough stuff to do the day of and day before.  But if you are so inclined, I just buy the wedding bouquets at Costco.  They come already arranged.  You can also head to a craft store and mess around with the fake flowers.  Even if you are set on real flowers, you can use them to see how many flowers are needed to create the size bouquet you want.
