OMG if I went to a wedding and they had brownies instead of cake I would be in HEAVEN! I wish I had thought of that I love brownies 🙂

Brownies would be so awesome at a wedding!!  A lot of people don’t like frosting, so these would be a great variation.  I don’t think you should worry about the color.  They’re brownies, they look good no matter what!

We’re thinking about looking into getting brownies and having a dessert buffet instead of a cake.  In my mind, our brownies will be shaped like hearts 🙂

Miss Biner – do you want it to look like a regular wedding cake? What if they used brownies as filler instead of cake? You know how sometimes cake designers use rice krispy treats instead of cake sometimes because it’s sturdier? Then they cover it with fondant to mask the difference in texture. Most venues take the fondant off before they serve it anyway. Can’t hurt to ask your baker right?

My parents had wedding brownies instead of a cake! 

That being said, brownies most likely wouldn’t work in the layers and shape of wedding cake. Even regular cake is often too soft for wedding cake, and brownies are definitely too dense and crumbly to work in most situations. 

I’d talk to your caterer, but there are lots of cute things you could do – like do sheet pans of varying sizes, and stack them on a wedding cake/cupcake type rack so they’re in the shape of a cake, but each still in their pan.

I just got the new issue of brides magazine and on page 346 they have a sample of a brownie display cake. sorry i couldn’t scan it don’t have a scanner but its soo cute.
