I don’t know the type of menu you are looking for, but here are some suggestions:

platter of cold boiled shrimp and cocktail sauce

skewers of grilled veggies, chicken, beef

crostinis of any type, like bruschetta

stuffed mushrooms

phyllo cups filled with chicken or shrimp salad

If you go to places like BJs, Costco, or Sam’s Club you can check out their freezer department and they carry tons of party foods that you just have to heat up.  Stuff like cheesecakes from the Cheesecake Factory and things like that.  Good luck!!!

spanakopita is a little filo dough pastry usually shaped in a little triangle with something inside of it – sometimes spinach!

Other buffet items we are having (for inspiration)

-mashed potatoes

-salmon in lemon caper sauce

-mushroom stuffed ravioli

Spanakopita is a greek spinach pie.  They are a pretty popular appetizer because they aren’t messy and most premade ones are in smallish type servings.  If you can’t find some at Costco here is a recipe.  They are super good and can be made the day before!

Edit: I also meant to mention that you can get a really cool edible arrangment as your buffet centerpiece.  I ordered one as a the centerpiece for a birthday party  and it was a hit.  They just need a day’s notice and they order new fruit each day so it is always freash tasting!  http://www.ediblearrangements.com/Default.aspx

We’re toying around with doing a pasta bar/buffet. 2-3 kinds of pasta, 2-3 kinds of sauce, and some toppings (chicken, meatballs, veggies, etc.)

@vicarswifeintraining: Grts are coarsely ground hulled corn that is boiled.  Items such as cheese and bacon are mixed in to take it from a breakfast side dish to a dinner side dish.
