Oh true I don’t enjoy juggling a drink with a plate of food either. I think most of the nicer buffet weddings I’ve been to though that wasn’t an issue as there was still wine at the table.
OP, some caterers also offer the option of doing a plated salad course with bread, followed by buffet/station style for the main course. I think that’s the best of both worlds cause then everyone has something to nibble on while waiting for their turn for the buffet.
