I searched on the bee for a way to make mojitos in bulk for our semi self-serve bar and everyone said it couldn’t be done. So I expanded my search to the world wide web and found a recipe that is pretty good. Granted, I’m by no means a cocktail conoseur….but we think they’re better than the ones we had at the bar last weekend 🙂
You need to make your own mint-infused simple syrup in advance
Heat 1 cup water, 3/4 cup sugar and 1/4 cup brown sugar until the sugar dissolves. Steep 1 cup fresh mint leaves in the liquid for at least 30 mint. Skim out the mint leaves and store the syrup until you are ready to mix up drinks.
Mix 2 parts syrup with 1 part lime juice to make the base.
Mix 1 cup base with 2/3 cup club soda and 1/3 cup rum. Serve over ice and garnish with mint and a slice of lime.
We plan to mix up the base in advance and just add the rum and club soda when we pour it into the beverage containers on the day of.
