Hmm, I’ve never seen this done before, but it sounds like so much fun! I’d definitely try to put the cakes out as “last minute” as possible. Who will be handling the rest of your food?

Can you leave the cakes under domes (not on the stands if there isn’t room) and then have someone place them atop the stands when it’s time for the reception to start?

I’d put the cake stands out and put flowers on them or something. Then, you can add the cakes at the last minute. They’ll be out for a while during the cake buffet anyways, right?

When/where is your wedding? What will the weather be like?

If the reception is outdoors I would leave the cakes inside until the last possible moment. I went to an outdoor wedding and the cake was melting by the time they cut it.

Speak with the baker (even if it’s the one at the local grocery store you’re buying the cakes at) and find out what icings stand up the best to being outdoors during the time of year you’re getting married.  You may have to forgo certain fillings if they have a tendency to go bad in the heat.  I wouldn’t set them up until the last possible minute but if there isn’t any refrigeration then make sure at the very least that they are in the shade.  If they’re not covered in a garden they will probably be attacked by bugs if left out so I would probably keep them in their containers until right before serving them.  Everyone should understand why they aren’t being left out during the entire reception.
