Fiance and I went for our cake tasting this week! We went to Craig’s Cakes and tasted some of their amazing creations. I love cake, seriously. So for me a good tasting cake is key, second…I want seconds! I would love for us to have enough cake that everyone gets more than one tiny sliver.

I am pretty sure Fiance didn’t so much “taste” his cakes as “inhale” them but that’s go to be a good sign right?! All he could tell me was that he liked the pumpkin cake with cheesecake mousse filling best (omg..me too!) and the carrot cake with cream cheese filling. He ruled out red velvet right away because he’s just seen it at every family function he’s ever been to and insists on doing something different. (In my opinion the red velvet was very good, but it was not my favorite so no biggie)
As for my other favorites, the pumpkin with cheesecake mousse filling was a clear front runner. Though carrot cake has always been a favorite of mine I preferred the lightness of the pumpkin cake. I also LOVED all of their chocolate cake options which included chocolate cake with  Chocolate Mousse  Chocolate Peanut butter Mousse and  Mocha Mousse…How do I choose one?! Or two? Lastly on my short list of favorites was Strawberry Cake with Key Lime Mousse, it was fresh and fruity but not too tart. Love.
As for frosting, the tiered cake will be butter cream since I want it decorated something like this…
Our other choice is what they call their “signature frosting” , it’s a light whipped frosting with chocolate shavings and comes in vanilla with white chocolate or chocolate with milk chocolate shavings. Mmmm. Fiance was not to thrilled with his sample of this, in fact it was the only thing left on his plate. But since our tiered cake will have his favorite, the butter cream this leaves me to my last choice…how to have our cakes prepared.
For the tiered cake we have the option of three or two, the three tier is significantly more expensive and we would still need one small cake in back to make sure everyone gets ONE piece of cake. On the other hand the two tier saves us a lot of money and we can then add 1/4 sheet cakes of additional flavors. Right now I am thinking of doing the two tiered cake with 3 x 1/4 sheet cakes in back. This gives us about 200 servings of cake for about 130-140 people. Plenty of extra for seconds or to take home. This option still saves us about $100 versus the three tiered cake with about 70 extra servings of cake.
With that in mind…what flavors? Right now I am leaning towards the following…
Two tired cake: All Pumpkin with Cheesecake Mousse Filling (Butter Cream)
1/4 Sheet 1: Chocolate Cake/Chocolate Mousse/Chocolate Signature Frosting
1/4 Sheet 2: Chocolate Cake/Mocha Mousse/Vanilla Signature Frosting
1/4 Sheet 3: Strawberry Cake/Key Lime Mousse/Vanilla Signature Frosting
I am torn between the mocha mousse and the peanut butter?! But leaning towards mocha. Lastly if we do the two tiered cake there is a cake stand that I just loved…
I think it would look great!
What does everyone think? Too much cake? In my mind there cannot be too much! LOL.
