so my wedding is next week (yay!) and im trying to figure out what fillings to do for the cake. I’m doing the cake myself to save money since i work as a baker and cake decorator.
so i decided that there will be 3 tiers, the top red velvet, middle chocolate, and the bottom white. i will be using white buttercream for the icing. the flavors im craving in the ways of fillings are strawberry, lemon, raspberry, caramel, and fudge.
i have thought of mixing 2 fillings in 2 to 4 separate layers on one tier. for example, the white cake would have strawberry and lemon filling and the chocolate fudge and raspberry. if i do something like this, i dont know what to use for the red velvet. the most common icing/filling used is cream cheese or a mix of cream cheese and butter cream, but the problem is that i dont like cream cheese and thats the cake slice i want!
i dont know if i was clear on what i meant about the layers so what i mean is:

please let me know what you think and what flavors you remember the most and would crave for.

Keep in mind that even though you may not like certain combos, traditionally, the bride and groom only get one bite at the reception, plus the top tier to take to their hotel room to snack on (it won’t last a year). Your guests are the ones who will be enjoying the majority of the cake so pick combos they will like.
Have you done a Google search for cake fillings? Cakecentral.com’s forums are full of ideas. Most bakery sites have creative options.
Since you don’t want cream cheese for the red velvet (even though your guests may prefer it) you could do anything that goes with chocolate cake. Raspberry jam for example may work.

@mightywombat: white chocolate sounds good but i feel it would bee a chocolate over kill for me.
@Ember78: ive spent months googling flavors and paying attention to the cake orders for customers that i have been doing, but they all seem to be.. lacking.. i was on cakecentral.com earlier looking for non-refridgerated fillings and i wasnt really feeling the combinations listed.
@Naiexoxo: the caramel sounds yummy with pecans but im allergic to pecans.. it sucks because i wanted to use kiwi but i can have that either.
sigh, i know i sound picky or like a bridezilla, but i want to avoid the common combinations and stay away from the odd ball stuff.. so somewhere in between. and the groom doesnt really care because hes looking forward to mashed potatoes.. (*shrugs and shakes head*)..
