What are the other options offered by the caterer?

Ah, okay.  What about a sorbet?

Sorbet shouldn’t be hard to make at all. Lemon sorbet is really refreshing and delicious.

Sorbet isn’t hard to make at all–they may even buy it to serve.  I would suggest lemon sorbet with some pirouette cookies or tuiles.

I love apple tarts.

I would do a cherry or strawberry pie.  Depending on the size of your wedding, your venue and the catering setup, sorbet could be a bad choice.  A fruit tart made would be beautiful and it could be made with lemon filling that is milk free and blended with non-dairy whipped topping.

Good luck!

Besides the fact that non-dairy topping is not very good, be aware that it does contain milk protein. Cool Whip in particular also contains skim milk and light cream.

Make sure you read the ingrediants if you plan to serve this stuff.
