What about some kind of lasagna? Does he have a microwave he could heat it up in? Mashed potatoes… mac and cheese… baby carrots/ broccoli travel well for veggies- asparagus and steamed spinach definintely do not unless the spinache is creamed.

If he’s a meat n potatoes guy, he’ll love it. It will travel well once it’s cooled down!

Or another option would be to make a really yummy sandwich… ciabatta bread with steak and avocado and tomato… mmmmmmmmmmmm

I think anything in the pasta family travels really well and reheats well too.

I second the sandwich idea. Something filled with tons of cheeses and salumis or steak with horseradish and onions or something equally delicious!

I make enchiladas all the time to bring to people because they reheat very, very well. They’re actually easier to make then most people think.

Don’t forget dessert! A cupcake or some cookies would be cute 🙂

A few things Mr. Tacos LOVES:

Pesto chicken wraps (cold or hot) with lettuce, cheese, etc!  I bought the chicken, precooked, from Trader Joes and mixed it up with organic pesto and threw in a side of his fav veggies.  I was surprised he liked it so much.

Eggplant parm with a side of broccoli and garlic bread!  Or an eggplant parm sandwich.

I would really love to say baked acorn squash with mushroom risotto and brown sugar, but I know Mr. Tacos would give me the side eye for it.  🙂
