I made one of these for a high school musical I did costumes in.  I can’t tell you for sure how much wire we used (the school had a whole stash we could use) but it was a lot, so go for the cheaper wire.  You will need around 4-8 inches of wire per bead if you are attaching it to an internal structure, even more if you arn’t.

In the end you couldn’t see the wire at all if you have the beads and pearls close enough together, like in the pictures.  

Pearl bouquets don’t tend to look quite as gold toned/warm as this picture in real life.  The photo effects are adding to the look.  If you want, you could always paint the exposed wire (such as along the sides of the bouqet with a diluted paint mixture that would add a golden sheen but that way if any wears off you don’t have to worry about it.
