If you’re pretty sure the restaurant is clean I wouldn’t worry about it. Personally I don’t eat Chinese leftovers after 24 hours but everything else is fine in 48. (I had homemade leftovers from Monday for lunch if that makes you feel better. You know i’m a paranoid freak.)

Perfectly fine. I eat leftovers almost every single day for lunch.

Yes, as long as you’re heating it, it should be fine!

Yes! It should be fine. Just make sure you heat it up.

When it comes to leftovers… 48 Hours is a general rule of thumb… and yes keeping things either COLD (refrigerated) or HOT (heated thru) is what controls bacteria.

For all things food… a great resource is *The Joy of Cooking* … truly the best Kitchen Bible that any Bride can own.  Besides having a ton of recipes there is lots of great info on topics such as this (Food Storage – Cuts of Meat – Veggie Info – Prep Info – Measurements & Equivalents, etc)

I am on my second copy… got a paperback one as a NEW Bride back in the 1980s (30 years on well thumbed, mangled and stained !!), so I recently bought a NEW Edition when I moved in with SO and we began cooking together.

You can definetly eat it. Microwaving food for a minute will kill bacteria if any was present.

You’re fine! I eat leftovers 3-4 days later sometimes! Never been sick! The only thing I never risk is sushi!

For “leftovers”, as long as they were cooled to under 40 degrees within 2 hours of taking the good off the heat, you can safely eat them up to 5 days later (as long as they look and smell ok of course!). This is the health standard for restaurants, so in your home you are fine with leftovers (yes, even after 48 hours).

You can eat anything as long as it’s reheated to 165 degrees or more. At that level of heat, food borne bacteria will all be killed.
