I want to make some FABULOUS cupcakes to take home next weekend for mothers day. I’m not really much of a baker but I do enjoy it and I got a cake decorating set for my shower I’ve yet to use so I’m looking forward to trying that out too.
I need a good recipe though! I always just use box mixes. I want to do homemade. I’m thinking something fruity rather than chocolate. Also I’d like something just a little different.
So… anyone have a good recipe to share?

It uses a mix, but I’ve made these twice and each time they have been amazing. I’ve had a lot of people love them and ask for the recipe.

Love love love these vanilla bean cupcakes. Just spray the liner before you bake them otherwise they stick a lot.

My favorite lately is coconut lime cupcakes out of Vegan Cupcakes Take Over the World. They are divine! I make the icing with butter though 🙂 The recipe is from a book so I don’t have a link, but PM me if you’re interested!

These all sound good! I was kind of thinking something more like lemon or lime or orange or strawberry though…. something that seems springy and fresh.
Anyone have any recipes like that?

I made these for Easter and they were a hit. I also made the Boston creme ones in the picture below and they were an even bigger hit!
