i have some tofu i need to use for dinner tonight and the only thing i have made with it is stir fry and tofu parmigianna – but i want to try something different. Does anyone have any yummy but not too complicated tofu recipes?

I LOVE MaPo Tofu! Is there a asian store near you? The easiest would be to buy a pre-package mapo tofu sauce pack.
Or steaming it with some minced pork, green onions, soy sauce etc is yummy. 🙂

Make a quick peanut sauce: mix 1/4 cup each peanut butter and coconut milk, 3 Tablespoons each hoisin sauce and water,1 tabelspoon each sesame oil and rice vinegar, add 1 tsp curry paste or some curry powder.
Cut the tofu into squares-place it on a baking pan along with peices of whatever vegetables you have- I used sweet potato and brccoli last night- brush with some of the peanut sauce- Bake at 425 about 15 minutes.
Place veggies and tofu on top of rice in bowl. Pour some of the peanut sauce over. Enjoy.
If you don’t have coconut milk – use milk, evaporated milk, whatever you have. I freeze leftover coconut milk in ice cube trays, then place the cubes in a ziploc bag for storage. That way I have the few tablespoons called for in many recipes.
