    I definitely prefer the heavy cream over condensed milk versions…I also never seem to achieve the proper texture with the condensed milk; it’s less chewy caramel and more gooey dulce de leche.

    If I’m making actual caramels (which I have only done once), I stay away from the milk.  If I’m making brownies or millionaire’s shortbread, that’s all I use, though!

    I LOVE caramels. Just not brave enough to try and make them, so i can’t really suggest recipes. But i would vote chewy made with heavy cream. And i do like to buy the kind with sea salt sprinkled on top. Oh.my.God. Delish.

    I’d think that heavy cream would be the way to go for good quality caramels. I would think that condensed milk would be far to sweet with the sugar and have an artificial, cheap taste. Hope it goes well though. Let us know…
