I sometimes shread carrots with a cheese grater and add them to sandwiches.  It’s an easy way to add nutrients and texture to a sandwich.

You can also shred them and cook them, mix them with ground turkey, and make turkey burgers or turkey meatballs.  

Adding them to a soup (cut up) would also work, but that would probably be too high in sodium for most diets.

i love baby carrots and eat them every day – today i dipped mine in a tiny tub of philly cream cheese

I love them, but if you hate them, bake your fiance a cake or make carrot bread or something (like zucchini bread) and then give it away.
