We are getting married at The Serengeti Resort which is outside of Boerne. It is my favorite place in the world. If you haven’t been there, you and your fiancee should take a trip on a weekend and go check it out! Yeah, the wedding is fast approaching but I am not anywhere close to where I need to be! Hopefully I will have it more under control by next week (We had a three month engagement since the venue is totally booked through the middle of next year. They only had this date open because someone had just cancelled.)

I think the chicken florentine sounds great but I’d go with the chicken plus the side if you have the budget for it especially if you have vegetarians or people with gluten intolerances.

yum yum yum to both! If you do decide to go with the chicken I would ask if they leave the skin on. At my tasting the caterer did not have ht skin on, at the wedding it was on. My Maid/Matron of Honor mentioned that skin on helps with keeping it moist, but it was frustrating to have to deskin it ourselves and have a little pile on our plate.

I would go with the chicken florentine. You don’t need an extra side dish since it’s a one-dish meal.

I never order pasta if there’S another choice so I would pick the chicken. Could you give guests the option or does everyone need toeat the same thing?

Not everybody needs to eat the same thing, but I think having 2 different chicken dishes is too much chicken. If I were to do 2 choices I would need to add a beef, but that jumps the price up by about $8 per person, which is more thank 1K. Being that I have a 10K wedding budget, that is out of my price range.
