Yes, you hire event staff.  The caterer should be able to recommend an event staffing company, or just find one online.  Better to find more than one to research & compare.  Check reviews.  

You should tell the sales person about your event & what your needs are & let them assist you with the appropriate staffing package.  It should include a captain or manager.  

This staff will also handle scraping, rinsing & repacking your rental dishes, glassware & flatware.

shannymarie:  Be sure to do the math on the cost of food, plate/glasses/utensiles rental, and also hiring staff… compared to just hiring a caterer.

For your option listed above. I would hire the event staff or local students to tend to the buffet and cake. Not to serve the guest – wedding not cafeteria. Allow your guest to self serve as often as they’d like. Be sure your venue has a kitchen to properly store the extra platters.
