summerbride2016:  We did mostly hymns for our wedding:

Processional (bride only, no wedding party): Praise, My Soul, the King of Heaven (Lauda Anima)

Offertory: Love Divine, All Loves Excelling (Hyfrydol)

Communion: Panis Angelicus (Franck) (done as a solo by my BIL) 

Recessional: For the Beauty of the Earth (Dix)

Our families are very musical, so despite the lack of choir, everyone was comfortable singing. A lot of hymn tunes sound lovely on organ even if you don’t sing. I really wanted to process in to Handel’s Arrival of the Queen of Sheba, but my choir director/organist shot me down 🙁 Another choice would be Bach’s Where Sheep May Safely Graze, which I think is fairly underutilized in Catholic weddings. Since you have an organist, how about Ode to Joy for the exit?  We’ve been stuck on this too but I think that’s what we’re going with. A lot of our other ideas for the rest of the ceremony have already been mentioned.
