My ceremony and reception will be held in the same venue/banquet hall. I’m planning on separating the ceremony from the tables with curtains/special separators. My centerpieces have white roses, and fuschia/pink lilies.
However, I also love pink, blush, and white roses. So my question is, for the ceremony, would it look off or strange to use very different colors to decorate? How about my bouquet? Does it have to match the colors on my centerpieces?

I don’t think they have to match. I think having different colors makes it more interesting.

No one will ever notice if they are different

I’m using different flowers (phalaenopsis orchids) for my reception as well. My bouquet flowers will most likely be white peonies (mixed with other flowers).
