I don’t have an answer for you but love the idea of your centerpieces.  I also thought I would give you a bump 🙂

I think the biggest thing with printing on vellum is to let the image dry. I’m using vellum for my belly bands for my invites and I made the mistake of rubbing my hand over the printed area and  bye bye went the ink. I would lay them out on a table or something and let them sit for at least a day. You may also want to test the printing before you start. With “heavier” images that may require more ink may seep through the paper since vellum is sometimes thinner than regular paper. You may be able to print everything using the fast draft setting. This will also save you on ink.
