What if you did a combo of both? Champagne for those who want it and white wine for yourself and anyone who prefers that.

mcatt19:  I think white wine is great. Make sure everyone will be able to enjoy it, though. You can buy individual cans of champagne for those that don’t want white wine.

I would suggest some light white wine like a pinot grigio, St. Germaine elderflower liqueur, and strawberries. I, too, get bloated and belchy from bubbly, so this is what we served for a NYE party instead. 🙂

You could do mimosa (for those that want them) and maybe a white sangria with some fruit! A lot of brunch places around me offer sangria/mimosa.
