    @Catcat1:  marsala – chicken & mushrooms in a marsala wine sauce

    francese – chicken in a lemon butter white wine sauce

    piccata – chicken in a lemon butter white wine sauce with capers

    florentine – chicken with spinach in a wine and cream sauce

    I voted chicken marsala.. but then I realized it’s for a wedding and I only like my Mom’s chicken marsala… so I want to change my vote to chicken florentine

    I think it really depends on how the caterer makes all of these – they may all sound good, but until you’ve had it the way the caterer makes it you just don’t know. Just be careful because I know with most of these chicken dishes at wedding they end up being overly saucey with rich sauces and the chicken overcooked.
