To be honest you can put just about anything on a chicken just be vigilant not to overcook it and it’ll be delicious.

When I roast whole chickens I usually put 2 in a dutch oven; seasoned with salt, pepper, garlic and oregano. They’re usually done in a little over an hour.

You’re probably thinking whole chicken but I love making Chicken Monteray with chicken breasts.

Marinate the breasts in italian dressing and garlic overnight. Then, simply cover the bottom of a glass baking dish with your favorite salsa, lay the chicken breasts on top, and cover the chicken with thin slices of monteray jack cheese. Bake at 350 degrees for about a half hour.

The chicken comes out so moist and flavorful and it’s really easy to do.

My favorite thing is to cook a whole chicken in the oven and serve it with herb butter–all you do is mix fresh (or dried) chives with butter and its delicious!

How about engagement chicken? Wink

I don’t know whether you’re married or engaged, but I’ve heard it’s a good recipe. Never used it myself, though.

Make this. Seriously:

It is SO good. And not spicy at all. Get the chicken breasts with skin still on them, because the skin turns into this amazing crispy crust, and even if you don’t eat it, it will still serve to keep the meat juicy and tender.

Look on http://www.taste.com.au

There are HEAPS of good recipes on there!

I don’t eat meat, but my Fiance loves Chicken Parmigiana ๐Ÿ™‚

You pretty much fry boneless, skinless chicken breasts, and then grill them in the oven topped with a tomato based pasta sauce, spinach, mozarella and parmesan! So easy peasy Smile

Also, other good ones are: butter chicken, mango chicken, lemon chicken, and chicken stuffed with proscuitto and mozarella.

You could even try a chicken and eggplant bake!

Good luck with your searching Smile
