@Bostongrl25:  I marinate mine in tomato paste, soy sauce and honey. Broil until cooked through, serve with brown rice, broccoli and sprinkle with sesame seeds. Tastes like a really healthy teriyaki chicken.

i cover in morrocan spices and then cook in dutch oven w carrots, cauliflower, onions, gsrlic and tomato until all cooked and serve w cous cous (or just eat like a stew)

we are actually having this tonight!

We had thighs, last night! Darling Husband seasoned them with salt, pepper, tarragon, and a bit of cayenne to balance the flavors out, and baked them at 425ºF for 10 mins., and then dropped it to 350ºF for another 20 mins. He served it with a parmesan risotto, and broccoli florets… yum!

We love to marinate them in terriyaki sauce and make lettuce wraps.  (Include various veggies too – grilled peppers & onions, or bean sprouts / cilantro.)

Chicken tikka masala!

Recipe calls for breast, but I always use thighs. I leave out all the extra salt as it is plenty salty on its own. I also leave out the jalapenos because I like less spice. And cilantro because it tastes like death to me (lol).

I’m making chicken thighs tonight too. Making a Thai red curry. Also adding bell peppers, broccoli and mushrooms. Will serve over steamed rice.
