I’ve thought about making infinity dresses for my BMs as then they’ll be able to wear them how they like on the day, and they’ll be more re-usable again. The problem is that really I wanted them to wear chiffon or something similar (my dress is organza) and I don’t know if it would work very well because obviously it’s not a stretch fabric. Any advice from anyone?

You could do it but keep in mind, a) you’d have to line them or do multiple layers since chiffon is sheer; b) you’d have to put in a zipper; c) you might need to cut the straps a little longer/wider to make sure there’s enough coverage.
Another thought–I know I’ve purchased sheer stretchy fabric (not jersey, probably a poly blend of some kind?) before and used it as the top layer of a dress. It would look more like chiffon but would give you the stretch you want (although you would still need to do a lining of some kind)
