    You should definitely go with the assorted stuff so people who don’t like to see a lot in the morning can have something and not feel like they have to have a lot.

    I would then choose one non-meat egg dish, a meat egg dish, and something sweet.

    Get a few different kinds of things! Maybe one kind of omelett, a waffle/french toast option, some assorted pastries for the picky eaters, and a lunch-y option like the burger or salad. Don’t forget to offer mimosas and bloody mary’s for a real brunch!
