Sometimes we make a “Trifle”

Make 2 or 3 cake layers.  Make 1 large or 2 small boxes of jello, add berries, when the jello is like runny egg white consistency, stab cakes with fork tines all over the top and pour the jello onto the cake. (We like strawberry with strawberries, or raspberry jello with raspberries).  Make a (stovetop, pourable) custard.  Just before serving add banana slices to the custard, otherwise the banana slices will turn brown and mushy.  Before serving, cut up or break up pieces of cake.  In a pretty clear glass bowl (or individual dessert dishes) layer cake cubes/pieces and custard with added slices of banana, and top with whipped cream.  It looks pretty and tastes Yummmmy!!!

Cake balls have been the biggest hit for me the last few years, or mini pies.  Anything bite size is always a big hit.

This is one my family loves.

Cranberrry Cloud

2 cups chocolate crumbs                                  1/3 c butter, melted

2 squares semi-sweet chocolate                      1 orange

8 oz cream cheese                                            1 can cranberry sauce

1/4 c sugar                                                       1 c whipping cream

1 tsp vanilla

Mix crumbs and melted butter. Place in the bottom of 8×8 or 9×9 square pan.

Coarsely chop chocolate. Finely grate peel from orange.

Beat whipping cream with vanilla until peaks form. Set aside for now.

In large bowl using mixer, beat cream cheese until smooth.Beat in cranberry suace and sugar until evenly mixed. Stir in chocolate and orange.

Gently stir 1/3 of the whipping cream into the cranberry mixture. Then gently fold in the remaining whipped cream until no streaks remain.

Spoon over the chocolate crust. Cover with palstic wrap and freeze overnight.

Let stand at room temperature about 10 min before cutting into squares to serve.

Pecan pie cheesecake! It is the best thing I have every tasted. You start out like you are making cheesecake and then add pecan pie filling on top.When it bakes you end up with and cheesecake pecan crust with a yummy pie center. I haven’t quite perfected it yet but so far the few I have made had disappeared almost instantly.

MMMmmm.  OMG-Pecan pie cheesecake sounds like the best of everything.  I think I will make this with our awesome cheesecake and pecan pie recipes.   🙂
