I’m getting married in New Zealand and well…not a whole lot of a Jewish community in the area and we want to get a chuppah. I can’t find anyplace to get it there – any ideas of how we can buy/make one here? And then what do we do about poles – can we just use branches or something?

Branches would work. What about those foldable tent pole things? They could fold up and fit right into your suitcase and they are light weight but sturdy. You could make some kind of pretty “sock” or sleeve to slide them into so they are all covered up.
I also thought of 3/4 inch PVC pipe cut into manageable lengths and put together with pipe joints. It could also be covered with some sort of sleeve or fabric tube.

Maybe you could make one here using PVC piping. Do all the sewing here and measure the PVC piping used. Then, bring all the fabric with you but buy new PVC piping there and cut it to the exact same measurements. PVC is pretty cheap and packing it would be a major hassle!

There are some synagogues in New Zealand – have you tried contacting one near your venue to see if they have a chuppah that you could rent/borrow? I know my synagogue has a chuppah people can borrow for their weddings.

I made one that could be put into a suitcase. It was built on the frame of a portable popup gazebo, so it folds down. Here is a picture:
