(Closed) Coca Cola shrimp tacos… what to make with leftover shrimp that’s also vegie?

I think any pasta dish would work (add in some chickpeas or great white northern beans to give him some protein).  Or any stir fry– you can add eggs (if he eats eggs) for some protein.  Just cook your shrimp separately and combing them in your dish.

Does he eat any type of seafood or is he totally vegan?

Perhaps Cheese?  or Lentils? or Beans?

Make some baked stuffed shrimp, but for your guy add the stuffing to a zuchinni to make a zuchinni boat. (use any stuffing recipe that catches your fancy and core out the seeds of the zuchinni to make the boat)

Serve with a garlic oil and angel hair or couscous cooked in chicken broth. 

A nice wilted spinach would be good too.

substitute the shrimp for chickpeas (aka garbonzo beans) or black beans, or fried potatoes. I had a potato burrito the other day off a food truck and it was divine! The potato was cubed up and cooked with onions and mexican spices and I never missed the meat at all.

@canthugallcats: Sorry!  I forget that not everyone uses the same terms for chickpeas/garbanzo beans.  I add beans to pasta all the time because we eat primarily vegetarian– you can add them with tomato sauce or just some olive oil, garlic, parsely, and pasta water… butter and/or cheese are always nice additions as well.  Or pesto or vodka sauce.  Really, whatever sauce you usually use is fine.  I don’t think I’ve added black or kidney beans to an italian-type pasta dish, but I think I’ve used all the rest in combo or on their own. It’s only one meal, if it doesn’t work, have a bowl of cereal and call it a night– that’s my philosophy!  🙂
