You’ve got about 10 pieces per person, which might last an hour and a half or so.  If you have it out for the whole 3 hours, it might look picked over.  I would do cocktail food for 1.5 hours, then switch over to desserts for the remainder of the reception.  Do a combination of passed and stationary so people aren’t all crowding around a buffet table.

10 pieces each might be a little on the low end. I think I heard 12-15 pieces per person for a heavy appetizer reception. Of course, this depends heavily on the size of each appetizer. Your catering manager should have the best estimate given they know the size of each portion.

I would get some finger sandwiches or pinwheels, as well as a cheese display. These are relatively inexpensive, but hopefully the people who are starving and can’t help but stuff themselves can fill up on these. And it makes the fiance happy – win win!
