Your theme will work just fine. The ballroom is the “chic” part. It’s the contrast that provides the interest.

You and I are in exactly the same boat. I think the way the tables are dressed makes the biggest difference. That and the lighting. Does your venue have any restrictions in terms of decorating?

Here are some photos I have saved, hopefully it helps. If you want it to still feel elegant I would say stick with some glass jars and not all mason jars. Use rich colors like purple and fabircs like silk or a damask pattern. Also, make sure your decor has a purpose, that it’s not just a prop you saw on a blog.
