I don’t think it really has to be an either-or situation. Plenty of people take a little time off school to have a baby. It can be something as simple as missing a semester or quarter. You can do both. I don’t think you should sacrifice one for the other.
That being said, I would weigh some of the pros and cons of switching to this field. Do you see yourself being happy in a different field? Is there a way to make it more stable? Can you incorporate elements of it to something more consistent? Is there a way to follow your passion that has better hours and stuff?

If you can manage with just your husband’s income, I’d generally say to go back to school while still TTC. If you get pregnant faster than expected, great! You can deal with that when it happens. But after two years you may be looking at a long fertility process, so I’d continue to move full steam ahead on TTC without putting my life on hold in the meantime.
That said, I definitely wonder about your particular career choice: going back to school for a job with lower pay AND worse hours? Isn’t there any other job you’d enjoy that doesn’t require quite so many sacrifices?
