I meant is it for dinner? Do you only want appetizers? Do you need suggestions for main meats, side dishes, appetizers, etc.?

Rissotto station! With roasted veggies, grilled meats, nuts, etc. to top. We did this for a corporate function and it was by far the most popular station.

Another one that we did that was really popular was a “wings” station- lots of chicken wings, and different sauces for the wings…buffalo, really spicy buffalo, BBQ, sweet/spicy Thai, and something else I’m forgetting, with celery sticks and side sauces (ranch, blue cheese).

We’re doing a mashed potato bar (with garlic mashed, mashed sweet potatoes, lots of toppings), an Italian station (custom pasta bar, eggplant rolatini, a couple salads), and a traditional dinner station (roasted tri tip, chicken piccata, seasonal veggies, rice).

We were going to do something more creative but ultimately chose pretty standard stations because it was the best food at our tasting and we know our meat-and-potatoes crowd will love it.  I’ve also seen suggested an Asian station (sushi, stir-fry, potstickers), a New England station (seafood bake, chowder), a German station (pierogies, sausage, hot potato salad), a grill station (kabobs, steaks, chicken), a crepe station, a risotto station, a comfort food station (sliders, mac & cheese, fries), a junk food station, a Mexican station.  Honestly, the possibilities are endless.

I’m big on appetizer platters: cheese (various, imported kinds – yum!), fruit, vegetables, deli meats (sliced and cubed), anti-pastas, salmon (lox), veggie wraps, chicken wings/nuggets/popcorn, shrimp, pickles/relish/olives, deviled eggs.

You could do different kinds of food like Chinese, Italian, etc and have a huge variety. Chinese could have egg rolls, your favorite kinds of entrees, Etc. Italian could be things like bruscetta, caprese salad, Etc.

@sportsgal31:  I’d never heard of it until right now but a mashed potato bar sounds amazing.  If my brother were there he would think he had died and gone to heaven.

I decided to do “family style” dining at each table (for the actual meal) and a dessert and candy buffet. I’m thinking of doing an ice cream bar as well, it’s not a buffet but I thought it was a cool idea -)
