If you want to have fun, just go with the bunny plan. It’s nothing to do with your brother and his girlfriend unless you’re worried it’ll cause confusion as to who got engaged.

I don’t have any other suggestions than to go with the bunny thing, I have never really heard of anyone sending out engagement announcements.

Can you do something with ring pops? Those are cheap,and you can get a bucket of them at target or Costco

 “We plan to announce at Easter when all of our family will be there” . Yes , good idea.  No need for cutesy announcements, especially as it is so long before your actual wedding.  I must confess I don’t see why a very long engagement warrants ‘extra’ at announcement.

If you want something Easter themed that isn’t bunnies, maybe little 🐥 and you can have it say something along the line about being his “forever chick.”  Or for the seed packet, I saw something that said “He loves me, he loves me not, he loves me, so we are tying the knot.”  I really like your bunny/carat idea though.
