    Here are my thoughts:

    -Chilled sweet Iced, Lemonade and cucumber infused iced water — I would offer lemonade, water (regular), and iced tea.


    -Honey-roasted peanuts and pretzel snacks *I’m thinking of eliminating the snacks all together, I don’t think I like the idea of peanuts and pretzels.* – Yeah that doesn’t sound awesome.  But then, I hate peanuts.  Other people love that stuff.


    I would do a poll with the hors d’oeuvres so you can see what people think in general.  The dinner sounds fantastic.  

    And yay New England!

    This menu sounds amazing! I would love to come to your wedding. 

    I agree that the peanuts and pretzels are kind of pointless. Everything else is amazing and I love cucumber water on a hot day.

    @PaisleyMedic:  I don’t think the pulled pork and the chicken skewer are at all similar, completely different animals and serving method. Yes they are both ‘bbq’ but they most likely have different style sauces and the flavours would be different. 

    I don’t think you need the pre-ceremony snacks, everyone will be dressed really nice and greasy, salty snacks wouldn’t be a good idea.I also think the Tuna tartar is an easy exclude one. The meatballs are a toss up, meatballs are often a crowd pleaser, but they are not at all ‘fancy’ for a wedding.

    The late night snack, do they offer a ‘poutine bar’? You get french fries and various toppings like: gravy, different cheeses, ketchup, diced tomatoes and onions, bacon bits, sour cream, salsa, cheese sauce, chili. Anything you can think of to top fries with, your guest would probably love it. 

    Another idea is a nacho bar, same idea just with different nacho topping options. A candy bar would let your guests have a sweet treat for later on or to take home, this doubles as a favour. A sundae bar where guests make their own sundaes. The list goes on.

    I agree with the selections you’re thinking of eliminating

     

    Tuna:  I love it, but probably not a crowd-pleaser.  how many people do you know who think “raw fish??  yuck”

    Chicken skewer:  boring

    meatballs:  too much like potluck food.

    If you do eliminate one of the “BBQ” items, keep the Jack Daniels one. Jack Daniels BBQ sauce is the most amazing thing on earth, the PP who said boring probably doesn’t realize that this is not just grilled chicken on a skewer 🙂

    Accidentally hit the wrong button – I wanted to vote for the tuna tartar. BUT, I live in Ajaon where raw fish is common as mud and I eat that kind of stuff all the time. A lot of friends back home would find it off putting.

    First and foremost, this sounds like a LOT of food. I don’t really think you need a “gathering table” AND hors d’oeuvres AND chowder/fritters AND then dinner with all of those stations. 

    Anyway. Not too crazy about any of the hors d’oeuvres (crab cake might be okay, but I have no idea what bayou sauce is). I’d probably cut the meatballs, tuna tartare, and the shrimp.

    Skip the pretzels and peanuts, and offer unsweetened iced tea and regular (unflavored) water. I abhor any water flavorings (I’ve been forced to drink cucumber, mint cucumber, and flower water that tasted like old lady perfume previously), and you aren’t from the South, so I’m not sure how many people you know who will drink sweet tea. 

    However, I am ALL OVER that pasta station. Yuuuuuum

    Yeah, eliminate those peanuts and pretzels.  They’re not very “wedding” and it sounds like you’re planning an amazing wedding if it’s at an oceanside mansion!  Love it!  Any chance it’s in Newport, RI?  😉

    Also, skip the late night snack.  No one will be hungry by then!  And why would you want to serve french fries?  That’s no better than peanuts and pretzels!  Otherwise, I love it!  Here are my picks for hors d’oeuvres:

    -Spinach and feta stuffed mushrooms *Almost everyone loves stuffed mushrooms!*

    -Crab cake with bayou sauce *very New England and different from your clam station*

    -Coconut fried shrimp with ginger sauce *very New England and different from your clam station*

    -Jack Daniels chicken skewer *I’d choose this over the pork because some people don’t eat pork but would prefer a meat option that isn’t seafood.  Also, BBQ just isn’t very “wedding” to me either.*

    -Cheddar chive stuffed baby red baked potatoes *You can’t go wrong with potatoes!*

    -Goat cheese tart with roasted onion/olive compote *I’m not crazy about it, but you said 6 and this is better than the tuna tartare.  More balanced, otherwise it’s too much seafood.*

    For the carving station, I love flank steak but not with BBQ sauce.  Gross.  I’d probably go with the prime rib.  It’s the nicest option.

    I voted in the poll for appetizers. Regarding the carving station, I’d prefer prime rib over flank steak any day.
