I have a recipe for braised cucs.. it looks awesome and simple.. just havnet gotten around to doing it.. it has mint in it also…

Tzaki sauce – http://allrecipes.com/recipe/tzatziki-sauce/

Cucumber salad : 2-3 sliced cukes, 1/4 cup sour cream, dollop or two of mayo, vinegar, sugar and salt and pepper.  Toss together and leave in fridge for a few hours to let the flavors mesh.

Slice cucumbers, sprinkle sesame seeds and soy sauce on top.  A good salty snack!

My mom makes amazing refrigerator pickles. I guess it’s easier than traditional canning. They keep for a month in the fridge.

tomato and cucumber salad!!

toss chopped tomatoes and cucs with olive oil, red wine vinegar, lemon juice, salt, garlic powder and whatever fresh herbs you have.

so delicious.

you can always throw some pasta in there for a pasta salad, too.

If you have a juicer, they’re great for that!  Blend it with fruit and you have a delicous smoothie.  Especially any kind of melon.

 

cucumbers in a yogurt sauce is delicious too.

There’s one on my table that will make its way into some pesto pasta salad tonight.  We LOVE cold pasta salad with fresh veggies and fresh mozz.  Sometimes some chopped up grilled meat, sometimes not.

Add some slices to your water for cucumber water. I’ve never tried it but heard it’s very refreshing! I had a cucumber, blueberry, feta salad the other day that was really good. Or try making pickles!

I’ll eat cucumbers for a snack. Cut them up sprinkle with a little salt some lemon juice and some pico de gallo seasoning you can get in the latin food section or with the spices. It’s super tasty.

Apparently you can make cucumber bread.  It is just like zucchini bread, but with cucumbers instead.  I have not tried it but have heard good things.
