While we’re taking all of our guests (30 people) out to a nice luncheon the day of our reception, we decided we should also provide a little something for our immediate family (about 15 people), who will be with us at the ceremony the day before. My mom, aunt, and I are going to make sandwiches and cupcakes the night before–something simple and inexpensive.
However, we want to do something fun and creative with the cupcakes, and I’m at a loss here. I know how to make delicious cupcakes, but I’m not the greatest at making them pretty.
Also, do you think chocolate cupcakes would be enough, or should we do a mixture? I’m asking because we’ll end up with an absolute ton of cupcakes (since I usually buy a box of cake mix and make them that way) if we do more than one flavor. The other option would be to do something like a simple white cupcake with a variety of frostings.
I’m really digging this style and the simplicity (which I think would be pretty hard to screw up):
Any other ideas?

I wouldn’t make all chocolate unless you know that everyone likes chocolate. It’s no big deal to make chocolate and vanilla, especially if you are using a mix. You can mix up 1/2 of each box.
I personally would use an apple corer, remove a core of the cupcake, fill the hole with a filling, put the core back in then frost them.

@julies1949: Huh, never thought of doing the filling myself! You’re right, half and half would really be no big deal–we can always save the extra mix for another time. What fillings would you suggest?

I think just using different toppings- rounds spinkles, normal sprinkles, little sugar flowers, etc.- would be pretty easy but looks interesting when mixed and matched.

If you fill them, you can core them with an apple corer…or you can get a syringe and inject differrent spots on the cupcakes to randomly put shots of flavor. I think your idea is supercute!
