Just before FI came over today, he texted me and suggested we test out cupcake flavors for the wedding since we’ll be making them ourselves and freezing them (unfrosted) ahead of time. 96 cupcakes, tons of fun, and a few hours later, we decided we love all 4 flavors! Here’s the list:
1) Lemon cupcake with raspberry buttercream frosting (raspberry lemonade! )
2) Chocolate cupcake with peanut butter frosting
3) Red velvet cupcake with cream cheese frosting
4) French vanilla cupcake with white buttercream frosting
All of them are SO good! And I was pretty impressed that FI suggested doing this today, even though he does love cooking. The only thing we want to change is the peanut butter frosting. It came out too rich and peanut buttery and we want light and fluffy without an overpowering peanut butter taste. Does anyone have a good recipe that they’ve used that would fit the bill?
Oh, and here’s a picture of all four flavors just for kicks! 🙂

Ohhh nom nom nom!! There is no such thing as “too rich or peanut buttery” in my book! 😉

Those sound amazing! I bake on the side for extra money. This is the recipe that I use for PB frosting. People go crazy over it.
1 cup powdered sugar
1 cup creamy PB
5 tablespoons unsalted butter
about 1/4-1/2 tsp kosher salt
3/4 tsp vanilla extract (real)
1/3 cup heavy cream

I’m also doing cupcakes for my wedding.
I think we decided on:
chocolate cakes with PB frosting
dark chocolate with chocolate icing
french vanilla with vanilla or buttercream icing
oreo chocolate cupcakes with cookies-n-cream icing
But i LOVE you’re lemon cupcake idea. Send me one =D lol

@dbeland: It’s actually just a normal buttercream recipe with about 3/4 tsp of raspberry flavoring mixed in (we put a few drops of red food coloring in with it too, to make it more pink). I can get the complete buttercream recipe for you if you want, my mom is famous for it! Okay maybe not quite famous, but everyone loves it! 🙂
@cupcakebride2013: Thank you so much for the recipe! And I actually got the idea for the lemon/raspberry cupcakes from a cupcake place that’s in the food court of the mall I work at! I like my recipe better. 😛 The flavors work very well together!
