So, I’m having trouble with the whole day of timeline. However, this question is specific to ceremony/reception.
We are looking at getting married at 5:30pm. We will have taken all photos before the ceremony. All group and family shots (when should this start?). The ceremony will be less than 30 minutes. The reception site is less than 10 minutes from the ceremony site. Is it ok to start dinner around 6:30? Is that enough time for people to get there?

Are you having a sit down plated dinner, or buffet?
I think that is rushing things a bit. What if the ceremony starts late, or traffic gets backed up on the way to the site, people sometimes like to linger/chat after a ceremony. I would say start dinner at 645 – 7pm. People will need time to park, walk and find their seat.
Unless your party is small I think you should extend your start time.

I think people will mingle a lot after the ceremony and before dinner. I would say shoot for 7PM dinner. It sounds like you’re not having a cocktail hour. If things are 15 minutes early or late, then that’s not a big deal.

I say 7 pm also, things always come up, I think pushing it back a bit would alleviate some stress.
