They used uplighting to add color to the walls.

If you look at other pics you will see that there is space between the banks of lights and the ceiling, so you would be able to drape fabric. The ceilings are very high however so you would have to rent a lift to do anything with the ceiling. The venue may provide one as it is a convention center.

This venue is large enough to rent a parachute and suspend that from the ceiling- even if you do it over just the dance floor.

Otherwise you could choose to hang huge paper lanterns or float huge balloons. You could float the huge 3 ft diameter round balloons from your centerpieces or string a wire across the room about 10-12 feet up the wall and tie the balloons to that.

They can be expensive to fill. Getting your tank at a welding supply shop will be less.

Looks like a pretty big space to fill

paper lanterns are fairly inexpensive. I also like the idea as pp mentioned to use lots of uplighting!

on top of PP’s ideas, you can get glass vases at the dollar tree of varying heights, fill with water and floating candles. Since they are only $1 each, you can get a lot for not a lot of money to add some romantic lighting to the room and give it a dramatic impact. That is, of course, if your  venue allows candles.
