Can you fill some vases/larger jars with green apples?  What flowers are you using, they could be incorporated into that.

I really love the centerpieces with big, tall vases.  You could fill the vase with the apples (essentially where the water would be) and then stick your flowers out at the top!  I’ve seen someone do this with oranges before and it was really neat!

I second the idea for vases filled with apples with flowers on top.  One of my co-workers did this and it looked great!

I love the idea of using big glass vases filled with green apples as the centerpieces.  You could also do a low platter and put a large candle in the middle, with apples piled around it.  I actually have a big vase on our dining room table that I fill with apples, limes or lemons from time to time.  I love the punch of color.

I wanted limes in the tall vases under my flowers and my florist filled half filled the vase with limes and added these clear gooey bead things and water. The beads expanded in the water and it looked like the limes were floating in the vase.  It looked awesome.  Sorry I don’t know more about the gooey bead things, but I am sure your florist would know. I think they are kind of like this http://www.batteryoperatedcandles.net/floral-water-gel-beads.html but mine just looked clear in the water, you couldn’t make out the beads as clearly. I’ll try and find a pic of mine.

Here’s a close up of one of my vases. I think it would still look pretty without flowers, or maybe different shaped vases/bowls with just greens on top.

I had red apples in tall vases and LOVED it.  I brought the extra apples to work the next week… I’m a teacher, so it was pretty appropriate.  The one thing I would recommend if you do the apples in vases and add water is to really scrub the apples first- the wax that’s on them from the grocery store really stands out whent they’re wet!

I’ve seen pictures of using fruit as placecards or escort cards too.  You can pin names into the apple. 

You can donate the apples to a food pantry after, or tell guests to take some as a favor with different apple-based recipes.
