I would get him a smash cake if you want to do that and then maybe sopapilla cheesecake? We had that at my wedding shower to go with the mexican fiesta and it was great!! We found the recipe on Pinterest.

Sopapillas! So good.

Since he is a little boy, you could always do individual “dirt” cups for dessert.

I think birthday cake goes just fine with tacos. If you want to serve a different dessert, that’s great too, but I wouldn’t worry about the cake and tacos clashing.

I made this dessert last week for Cinqo de Mayo.

Maragarita Pudding

Combine 12 oz of thawed whipped topping with 6 oz of thawed limeade. Stir to combine. I separated it into two bowls at this point and added 1/4 cup of tequila to the adult portion. Store in refrigerator till set. Serve and sprinkle with toasted coconut.

The original recipe was for Margarita Squares and included a White Chocolate Macadamia Nut  crust. We had guests with nut allergies so that as out. I thought about substituting a graham cracker crust, but decided that most guests would prefer a lighter dessert after a big dinner.
